Toasted bread spread with chilli cream and kiwi

Starter

  • Ciabatta, pain de campagne or similar bread
  • Nice kiwis, not too ripe
  • Fresh cream cheese
  • Thai chilli sauce
  • Green radish sprouts

Cut a slice of the bread and toast in a toaster or under the grill until crispy and golden brown.

Peel the kiwis, halve lengthways and cut the halves into thin slices.

In a bowl, mix the soft cream cheese with a dash of chilli sauce and taste to see whether this creates a soft spicy cream. Add more chilli sauce if liked.

Spread the toasted bread liberally with the chilli cream and then add the slices of kiwi in steps. Finally sprinkle with the green radish sprouts and serve immediately.
