Crazy about burgers? Are you a vegetarian? Or are you a meat lover who wants to make a healthy choice more often by replacing meat with vegetables or legumes? Then these burgers are definitely something for you! These tasty and super healthy burgers can be ready within ten minutes and they are delicious as an evening meal served with oven-baked baby potatoes and a salad. Or make a hamburger by serving them in a bread roll with tomato, onion and avocado. Use red instead of yellow onions, they have a little more punch. These burgers are also a party on the table for kids as a result of the different legume sprout colours.
Tip: Prepare a little stock! You can freeze them, allowing you to still put a delicious and healthy meal on the table when you have a little less time.
You will need the following for two burgers
- 200 grams of legume mix (sprouts are found in the fresh produce compartment)
• 1 egg
• 1/2 red onion
• 1 tbsp of chick pea flour (or another flour type)
• Pinch of salt and pepper
• 250 grams of unpeeled baby potatoes
• 100 grams of lamb’s lettuce
• Drop of olive oil
• A few radishes
This is how you prepare them
Preheat the oven to 200 degrees. Rub the baby potatoes with olive oil, salt and pepper. Place them on an oven tray and cook in the oven for 20 minutes.
Continue with the burgers. Chop the onion, take a large dish and place the burger ingredients in it. Blend with a hand mixer, but not too finely, it is nice for some pieces to remain. Shape two burgers with your hands.
Heat a little oil in a frying pan and allow the burgers to gently slide into it. Fry one side on a medium heat for 5 minutes and the other side for 3 minutes.
Serve with a fresh salad of lamb’s lettuce and radish slices.
